GETTING OUR VEGAN NACHO ON.. x

 

 

So after sharing our home made vegan sour cream recipe with you.. we just had to go the whole way and let you in on theeeee yummmiest quick and easy nacho recipe to follow. We are all about sharing easy, hearty and healthy meals that any one can make at home. We promise you will be coming back for more!! Happy cruelty free mexican fiesta! (oh and an organic margherita is a must with any mexican meal) ;) xx

 

Ingredients:

  1. 1 tin of refried beans (you can choose with chillie or with out)
  2. 1 bag of organic corn chips
  3. 1 Jar of spicy salsa (for shorter version or can make home made salsa)
  4. 1 bag of cashews 150g net
  5. 1 lemon
  6. Fresh herbs (parsley and oregano)
  7. 1 clove of garlic
  8. 1 avocado 
  9. 1 organic tomato 
  10. apple cider viniger (1 table spoon)
  11. 2 margheritas (to drink while preparing) ;)

Soak cashews in water for around half an hour. While they are soaking heat refried beans on pan on low heat and add chilli, diced onion and garlic to taste. 

Heat corn chips in oven on low heat.

Add refried bean mix to chips once heated and pour salsa over the top. Drain water out of cashews and squeeze one lemon into cashews and add 1 table spoon of apple cider vinegar and cover with a 1/4 of a cup of water. Then blend till smooth consistency is reached and place in freezer to cool.

Add diced tomato and avocado to top of salsa.

Remove sour cream mixture from freezer and add by spoonful to top of nachos.

Add freshly picked herbs to taste. We use our favourite and always readily available herbs parsely and oregano.

You have 100% cruelty free VEGAN nachos ready to eat with margherita in hand. xx
