HOME MADE VEGAN SOUR CREAM RECIPE

Yes you heard right! Vegan Sour Cream exists... it is one of our favourite little home made recipes and SO easy to make.The perfect addition to our trade mark 'Vegan Nachos' that we will be sharing with you soon, but you can use this healthy and cruelty free alternative in place of all your popular sour cream additions to meals. 5 to 10 minutes preperation time and you can't go wrong! xx

Serves: 2 people/ 1 large dish

Preperation time: 5 to 10 minutes

Ingredients:

  1. Small bag of raw cashews (500g)
  2. Lemon (1)
  3. Apple Cider Vinigar (1 table spoon)
  4. Salt (1 pinch) 
  5. You will also need a mini food processor. They can be purched from woolworths for $20

Preperarion: 

Soak Cashews in hot water for 5 to 10 minutes, then drain out water and transfer to food processor. Take one fresh lemon, roll lemon on chopping board with palm of hand back and forth, this will soften the inside and make it easier to produce more juice. Cut lemon in half and squeeze in with cashews. Add 1 tablespoon of apple cider vinegar to cashews and lemon. The add one pinch of salt to cashews, lemon and apple cider vinegar. Turn on food processor and blend for about 5 minutes or until you reach the right consistency. The longer you process the mixture the smoother your sour cream will be. Transfer to a bowl and place in freezer for 5 minutes. Annnd whaaalaa! Home made easy prepared Vegan Cashew Sour Cream ready to add to yummy guacamole wraps or fried bean vegan nachos. You can buy ACV by the bottle at your local supermarket or from your health food stores. With the extra personal uses it definitely won't be going to waste.
