Comforting Oatmeal Coconut Cookies Making the world a better place, one cookie at a time!
This is a great no frills go to comfort cookie whenever the need for a sweet treat arises. Ingredients: 1 1/3 cups of flour; 1 tsp baking powder; 1/2 tsp baking soda; 1/2 tsp of salt; 1 cup brown sugar; 1/2 cup of vegan butter or margarine; 1 chia egg (1 tbsp of chia & add 3 tbsp of water and let sit 15 min to gel);
A chia egg not only acts as a great binding agent, but increases our daily intake of this great superfood. Chia seeds have many health benefits, some of which I’ve included above. 1/4 cup maple syrup; 1 tsp of vanilla; 1 1/2 cups of oatmeal; 3/4 cup of coconut.
Directions: Sift flour, baking powder, baking soda and salt; Cream sugar and margarine. Add chia egg, maple syrup and vanilla; Add dry ingredients to creamed mixture and mix; Then add oatmeal and mix; Then add coconut and mix up; Roll cookie dough into a ball and flatten somewhat with a fork: Bake at 350 for 10 - 12 minutes. This recipe should yield two dozen cookies.
