Living a vegan lifestyle doesn't create limitations when it comes to food. In fact it has the opposite effect, which allows us to be more open with our food choices and provides much more variety in our daily diets. All animal based ingredients have a vegan alternative which serves up just as amazing (and in my opinion, yummier) dishes for us to thrive on.
8 white mushrooms; 1/4 cup of chives chopped; 2 slices of sprouted grain bread toasted; 1 tbsp of organic maple syrup; 1tbsp of sesame seeds; 1 tbsp of vegan mayonnaise (I used Vegannaise); 1 tsp of olive oil; 1/2 cup of spinach chopped; 2 vegan cheeze slices ( I used Daiya cheddar slices); Pinch of salt.
Wash and de-stem 8 white mushrooms; Chop the mushroom stems finely and place in a medium size mixing bowl; Crumble sprouted grain toast into bowl; Mix in the chives, spinach and sesame seeds; Cut up 1 and 1/2 of the cheeze slices into tiny pieces and add to bowl; Add olive oil, maple syrup, vegan mayonnaise, salt and mix all ingredients well;
Preheat oven to 350; Spoon a large amount of mixture into each mushroom cap until it's packed tight and heaping over the mushroom caps; Place mushroom caps on non stick baking sheet;
Slice the remaining vegan cheeze into long thin slices and place over the top of the stuffed mushroom caps; Place in oven and bake for 20 to 25 minutes; When complete let stand 5 minutes before removing from baking pan.
These make great appetizers for all occasions or serves well on its own as snack food for a Friday night on the couch! Enjoy LC babes X
