Ingredients 1 cup of cooked chickpeas; 1 medium onion minced; 2 cloves of garlic minced; 4 stalks of celery chopped; 2 large carrots chopped; 1 cup of mushrooms chopped; 1 cup of frozen green beans; 1 can of diced tomatoes (28 ounces); 1 litre of vegetable broth (low sodium); 1 tbsp of sunflower oil; 3/4 tsp of turmeric; 1/2 tsp of coriander; 1/2 tsp of salt; 1/4 tsp of black pepper; 6 tbsp of ground chia seeds (for thickening);
Directions - sauté onions, celery and chickpeas in 1 tbsp of sunflower oil for 5 minutes; - add mushrooms and sauté for another 2 minutes; - add garlic and sauté for 2 more minutes; - add carrots and sauté for another 2 minutes; - finally add the salt, pepper, turmeric, coriander and sauté for a few minutes more until the spices are mixed in and fragrant; - add one litre of vegetable broth and the diced tomatoes; - bring to a near boil and then turn down heat and simmer until carrots are almost tender; - add frozen green beans and ground chia seeds and simmer until sauce thickens. You can serve this dish over a variety of staples such as quinoa, brown rice, baked or mashed potatoes. You can also add any veggies of your choice to this recipe.
