5 INGREDIENT PINEAPPLE SQUARES
Here is a quick and easy recipe for pineapple squares that are sure to satisfy any sweet tooth!
3/4 cup of vegan butter or margarine
1 1/4 cup of organic brown sugar;
1 cup of organic white flour;
2 cups of oatmeal (I used quick cooking oats);
2 1/2 cups of crushed canned organic pineapple;
In a pot stew the crushed pineapple with 1/4 cup of sugar until mixture becomes thick. Set aside to cool.
Mix the remaining sugar, flour and oatmeal in a mixing bowl;
Cut the butter into the mixture thoroughly;
-Spread half of the base mixture in a greased pan;
-Spread filling and then spread remainder of base mixture and flatten;
-Bake 30 minutes in a 350 degree oven;
-Cut into squares while warm.
Note: These squares also pair well with a dairy free vanilla ice cream! Yuuuuuummm!
